My Birch Grove Mentorship!
This semester in Pilot I have participated in a mentorship at Birch Grove bakery every thursday morning from 5:30am to 9am. I work with my mentor John and his business partner Jenn, the owners and bakers of Birch Grove Bakery.
I would like to give a big thank you to John and Jenn for including me in the Birch Grove kitchen and teaching me many new skills and sharing their knowledge about baking.

Semester 1:
Scones!
Every morning at Birch Grove I start by making savory scones. The first day of my internship John had to walk me through and teach me the entirety of the process. By the end of the semester of this internship I was able to complete the whole process of making these scones with no assistance and efficiently.

Vegan Chocolate Cherry Cookies!
A majority of the weeks that I went to Birch Grove I made the chocolate cherry cookie batter to store in the fridge for the rest of the week. Some weeks the batter that I made was baked and put out on display to be sold that day.

Almond Date Caramel Chocolate Banana Tarts!
9/28 During my mentorship I helped with the assembly of many different baked goods. John would assign me tasks like making pie crust, piping filling, or putting the finishing touches on the pastries. An example is these tarts, I spread chocolate on the bottom, cut and added bananas in the center, along with the date caramel and piped almond filling on the top. |
Marble Brownies!

I made these marble brownies with one cream cheese mixture and one chocolate brownie batter. When making this recipe I was able to practice the technique of folding the batters into each other.

Semester 2:
During quarter 3, I continued my mentorship at Birchgrove Bakery. I have become more familiar and improved on the skills and tasks that John asks me to complete. In addition to the tasks I had been doing at the bakery during the first semester I have also been baking a lot of large batches of recipes for sweet scones and cakes.

2/15 I made a large batch of this tea cake batter and then baked some of the batter to put out for sale in the bakery. |

Bakery Case!

I completed the assembly and decoration on the baked goods in the case this Thursday. I assembled the ingredients of the mini Blueberry pies (top left), I piped the whipped cream ropes and decorated the tarts (top right, I assembled and pipped the whipped cream on the Tres Leches Cakes (bottom left), and I assembled the strawberry almond cakes(bottom right) by unmolding them, piping white chocolate, making whipped cream cornell's, and sprinkling almonds on top.
